BRESOALA
mozzarella, provolone, sauteed mushrooms, thinly sliced red onions, air-cured beef

ROASTED OLIVE
mozzarella, French feta, Italian roasted olives, marinated roasted tomatoes

till we run out then:

BLUE ROOM
mozzarella, gorgonzola, marinated mushrooms, fresh tomatoes

SALAD:
shaved parsnips, golden raisins, ricotta salata, and breadcrumbs on a bed of arugula in a sherry marmalade vinaigrette
