TASSO HAM and CARAMELIZED ONION until they're gone, then:

FINOCCHIONA
mozzarella, fontina, thinly sliced red onions, pickled fennel, finocchiona salami

WILD MUSHROOM
mozzarella, fontina, domestic, shiitake and porcini mushrooms, basil, sun dried tomatoes

SALAD
parsnips and wild arugula tossed in a sherry marmalade dressing with ricotta salata, golden raisins and breadcrumbs
